Lime Chiffon's pet parrot, Parfait, is the inspiration for this elegant dessert, which layers fresh orange and grapefruit segments with a rich orange liqueur-infused pudding and lemon curd whipped cream. The word parfait means "perfect" in French, and the dish originated in France in the nineteenth century. While French parfaits usually include ice cream, it is not a requirement. In fact, English recipes for parfaits are closer to pâtés and are made with chicken liver!
Makes 6 parfaits
Ingredients[]
- 1 cup heavy cream
- 4 tablespoons lemon curd
- 2 cups chocolate pudding
- 2 teaspoons triple sec or Cointreau
- 2 large navel oranges, peeled and sliced
- 2 small ruby grapefruits, peeled and sliced
- 1 tablespoon cocoa powder
Directions[]
- Whip cream in a medium chilled bowl using chilled beaters until stiff peaks form.
- Gently fold in lemon curd.
- Mix pudding and liqueur in a separate medium bowl.
- Arrange a few orange slices in each of six parfait glasses or martini glasses.
- Top with pudding, then grapefruit slices.
- Finish with whipped cream and a dusting of cocoa.
- Serve.
