- 1 cup extra-virgin olive oil
- ¼ cup fresh lemon juice
- ¼ cup fresh lime juice
- ¼ cup red wine vinegar (good-quality burgundy, if possible)
- 5 large cloves garlic, peeled
- 2 tablespoons capers
- 2 tablespoons caper juice from the jar
- ¼ teaspoon whole black peppercorns
- salt, to taste
- Combine all the ingredients in a blender and puree until creamy.
