Twice-fried plantain

  1. Heat chicken broth in a small saucepan.
  2. Add garlic.
  3. Let it sit until the plantain is finished.
  4. Peel plantain.
  5. Cut into ½-inch slices.
  6. Heat 2 inches of oil in a heavy duty frying pan.
  7. Fry plantain a little at a time until it is slightly golden.
  8. Remove, drain on paper towels.
  9. Take a glass and flatten the plantain.
  10. Return to frying pan and fry until golden.
  11. Remove and drain.
  12. Serve the patacones using the garlic chicken broth as a dip and also use the salsa as a dip.
