Enjoy all the flavour of classic pecan pie in a handheld square - these are rich and tasty with a shortbread crust.
Ingredients[]
- 1 cup (250 ml) all-purpose flour
- 1/2 cup (125 ml) finely chopped pecans
- 2 tbsp. (30 ml) brown sugar, packed
- 1/2 cup (125 ml) cold butter (or hard margarine), cut up
- 1 large egg
- 1/2 cup (125 ml) corn syrup
- 1/4 cup (60 ml) brown sugar, packed
- 2 tbsp. (30 ml) all-purpose flour
- 1 tbsp. (15 ml) butter (or hard margarine), melted
- 1 tsp. (5 ml) vanilla extract
- 1/4 tsp. (1 ml) salt
- 1 cup (250 ml) chopped pecans
Directions[]
- Combine first 3 ingredients in medium bowl.
- Cut in butter until mixture resembles coarse crumbs.
- Press firmly into greased 9 x 9 inch (23 x 23 cm) pan.
- Bake in 350°F (175°C) oven for 15 minutes.
- Beat egg in small bowl until frothy.
- Add next 6 ingredients.
- Beat until smooth.
- Add second amount of pecans.
- Stir.
- Spread evenly over butter mixture.
- Bake in 350°F (175°C) oven for about 20 minutes until filling is golden and set.
- Let stand in pan on wire rack until cool.
