Lisa Reid O'Rourke of Baton Rouge, Louisiana shares her holiday secret - cook as much as you can in advance. Her philosophy works well for her big annual holiday gathering. "I invite all my friends." she says. "I start a couple of weeks before the occasion so I will have as few things as possible to do close to the party."

  1. Beat butter and sugar at medium speed with an electric mixer until creamy; add egg yolk, flour, and next 4 ingredients, beating well.
  2. Press dough evenly into a lightly greased 15" x 10" jellyroll pan.
  3. Beat egg white until soft peaks form; spread over dough in pan.
  4. Sprinkle with chopped pecans, gently pressing into dough.
  5. Bake at 325° for 26 to 28 minutes.
  6. Cut into 2" x 1" sticks while warm.
  7. Cool on wire racks.
  8. Store in an airtight container up to 2 weeks or freeze up to 3 months.

Yield: about 5 dozen
