You won't be able to eat just one! these mini-cupcakes are adorable, delicious and so festive, with a chocolate-covered mint candy hiding in each one.
Ingredients[]
- 1 package of chocolate cake mix (1 layer size)
- 36 small chocolate-covered soft peppermints
- 3 cups (750 ml) icing (confectioner's) sugar
- 3/4 cup (175 ml) butter (or hard margarine), softened
- 3 tbsp. (50 ml) milk
- 1/2 tsp. (2 ml) peppermint extract
- 2 tbsp. (30 ml) crushed candy cane
Directions[]
- Prepare cake mix according to package directions.
- Fill 36 paper-lined mini-muffin cups 1/2 full.
- Place 1 peppermint on each.
- Bake in 350°F (175°C) oven for about 12 minutes until wooden pick inserted in centre of cupcake comes out clean.
- Let stand in pan for 10 minutes before removing to wire rack to cool completely.
- Beat next 4 ingredients on low in large bowl until combined.
- Beat on high for about 3 minutes until light and fluffy.
- Spoon into piping bag fitted with large star tip.
- Pipe onto cupcakes.
- Sprinkle with crushed candy before serving.
