Have a great and nutritional breakfast, even more fun if you are sharing it with a date :) Makes 6 main-dish servings.

  1. In a 10-inch ovenproof skillet heat oil over medium heat. Add onion, shallots and cook for 10 minutes or until tender and golden, stirring often.
  2. Add in the dates and cook for another 5 minutes.
  3. Preheat oven to 375 °F.
  4. In a bowl beat together eggs, water, salt and pepper. Stir in ¾ cup of the cheese. Pour into the skillet.
  5. Bake at 375 °F for 15 minutes or until completely set.
  6. Top with remaining cheese and the rest of the onion/date mixture.
  7. Cut into wedges.
