Gourmet pizza flavour rolled into a spiral! These can be made ahead and reheated. For best results, be sure to blot all moisture from the peppers.
Ingredients[]
- 13.8 oz (301 g) tube of refrigerator pizza dough
- 1/4 cup (60 ml) basil pesto
- 1/2 cup (125 ml) chopped roasted red peppers, blotted dry
- 1/3 cup (75 ml) grated Asiago (or mozzarella) cheese
Directions[]
- Unroll dough into rectangle.
- Spread pesto over top, leaving 1/2 inch (12 mm) edge on 1 short side.
- Scatter red pepper over pesto.
- Roll up, jelly-roll style, from covered short side.
- Press seam against roll to seal.
- Cut into 1 inch (2.5 cm) slices.
- Arrange, cut-side down, about 2 inches (5 cm) apart, on greased baking sheet.
- Sprinkle with cheese.
- Bake in 350°F (175°C) oven for about 22 minutes until golden.
Makes about 8 pinwheels
