Pickled Onions

1 lb. Maui onions, quartered 1/2 bell pepper, cut into strips 1/4 carrot, cut into strips cauliflower 3 or 4 hot peppers salt white vinegar

Bring to a boil, 1 1/2 cups white vinegar and 1 cup water. Arrange ingredients in a quart jar and add 1 heaping tablespoon of Hawaiian salt. Pour in hot vinegar. Cover and set for 2-3 days.
