A tangle of pickled purple carrot and red cabbage ribbons comes together to make a slaw like you’ve never seen before.
Ingredients[]
- 1 bunch purple carrots
- Juice of ½ lemon
- 2 tablespoons apple cider vinegar
- Fine sea salt
- 1 small red cabbage, cored
- ¼ cup (60 ml) extra-virgin olive oil
Directions[]
- Cut the carrots in half lengthwise.
- Use a vegetable peeler to create long, thin ribbons.
- Place the carrot ribbons in a large bowl and add the lemon juice, vinegar, and ¼ teaspoon salt.
- Set aside to pickle at room temperature for about 10 minutes.
- Meanwhile, slice the cabbage as thinly as possible into long, wavy ribbons.
- When the carrots are done pickling, add the cabbage to the bowl and toss to combine.
- Drizzle in the olive oil and season with a little more salt.
- Serve.
