A tangle of pickled purple carrot and red cabbage ribbons comes together to make a slaw like you’ve never seen before.

  1. Cut the carrots in half lengthwise.
  2. Use a vegetable peeler to create long, thin ribbons.
  3. Place the carrot ribbons in a large bowl and add the lemon juice, vinegar, and ¼ teaspoon salt.
  4. Set aside to pickle at room temperature for about 10 minutes.
  5. Meanwhile, slice the cabbage as thinly as possible into long, wavy ribbons.
  6. When the carrots are done pickling, add the cabbage to the bowl and toss to combine.
  7. Drizzle in the olive oil and season with a little more salt.
  8. Serve.
