  1. Singe and wash feet.
  2. Place in a pot with other ingredients.
  3. Bring to a boil, then simmer slowly [about 2 to 3 hours or until meat separates from the bones].
  4. Reduce liquid to about ½ of the original quantity.
  5. Strain liquid into a large bowl or mold.
  6. Separate the meat and bones, discarding the bones.
  7. Cut meat into small pieces and add to liquid.
  8. Refrigerate until congealed.
  9. Remove fat from the surface.
  10. Invert onto a serving plate.
  11. Slice and serve cold with wedges of lemon or with prepared horseradish or mustard.
