  1. Combine rice, 2-1/2 cups milk, Sugar and butter in saucepan.
  2. Cook over medium heat, stirring occasionally, until thick and creamy, about 20 minutes.
  3. Beat egg yolks; add remaining 1/2 cup milk. Stir into rice and cook 2 minutes more.
  4. Remove from heat; add pineapple with juice and cinnamon. Cool.
  5. Beat egg whites until stiff but not dry.
  6. Fold into cooled rice.
  7. Pour into buttered 9-inch square baking pan.
  8. Bake at 325 degrees 25 to 30 minutes.
