Pineapple Surprise Cake

1 yellow cake mix 1 can mandarin oranges, juice included 3 eggs 1/3 cup oil 1/2 cup water

Frosting: 1 20 oz. can crushed pineapple, juice included 1 small box vanilla instant pudding Cool Whip

Preheat oven to 350 degrees. Combine all ingredients in a bowl with a mixer until there are no lumps. Grease and lightly flour 2 round cake pans. Pour batter into pans and bake according to cake mix directions. When cakes are done, let cool. When cool frost with the following: Combine pineapple and pudding. Let sit for 3 to 4 minutes. Fold in Cool Whip. Frost top and sides of cake. Sprinkle top of cake with coconut.
