Ingredients[]
- 3 cups cooked rice
- ¾ cup chopped onion
- ¼ cup chopped green bell pepper
- ¼ cup chopped fresh parsley
- 1 x 4-ounce can mushrooms (stems and pieces)
- ¾ cup chopped celery
- ½ pound bulk pork sausage
- 1 cup cornbread crumbs
- 2 eggs, slightly beaten
- 1¼ cups chicken broth
- ¼ teaspoon ground black pepper
Directions[]
- Combine rice, onion, green pepper, parsley, mushrooms, celery, sausage, cornbread crumbs, eggs, broth and black pepper; mix well.
- Turn into lightly buttered casserole.
- Cover and bake at 350 °F for 30 minutes.
- Remove cover and continue baking 15 minutes.
