  1. Combine rice, chicken, Chinese vegetables, pineapple, celery, onions and pimento in large bowl.
  2. Whisk together mayonnaise, garlic, ginger, pepper, mustard and soy sauce.
  3. Stir into rice mixture; toss lightly.
  4. Serve on lettuce leaves; garnish with noodles.
  5. Serve with additional soy sauce, if desired.
