Polynesian rice
- 1 Cup Uncooked rice
- 2 Cups orange juice
- 1/4 T. salt
- 1 T. Grated lemon peel
- 1 T. lemon juice
- 1 Cup Drained pineapple Tidbits
- 1/2 Cup Toasted slivered almonds
Mix The rice, orange juice And salt in Pan. Bring to Boil. Stir Lightly. Reduce Heat, Cover And Simmer For 20 Minutes or Until rice is Tender. Drain And Chill. Add The Grated lemon Rind, lemon juice pineapple And almonds. Mix Well. Serve Chilled.Source: my Old Recipes
