The pomelo is an exotic big citrus fruit that is a very old antecedent of the frequent grapefruit. This massive citrus make part of citrus grandus family fruit and is native to Malaysia. It is also cultivated in California and Israel especially for commercial needs. The majority of the varieties found today have been bred and full-grown. A large pomelo is the largest of every citrus. The rind is very thick, but soft and easy to peel away. The resulting fruit is light-yellow to coral-pink flesh and can vary from juicy to slightly dry and from seductively spicy-sweet to tangy and tart. The pomelo is also known as a shaddock. The largest citrus fruit, the pomelo has a thick, coarse rind that ranges from greenish to yellow to pink, and pink or pale-yellow segmented flesh. The flavor can be either sweet or slightly tangy. The peel of the pomelo is also used in Chinese cooking or candied. In general citrus peel is often used in southern Chinese cuisine for flavouring, especially in sweet soup desserts. The thick peel of the pomelo is sometimes used to prepare marmalades and sweet candies.
