Ingredients[]
- 1 pound pork tenderloin slices, ¾ x ½-inches
- 1 egg white, lightly beaten
- 1 tablespoon cornstarch
- ½ teaspoon salt
- 2 teaspoons sugar
- 1 tablespoon vegetable oil
- 1 teaspoon ginger, grated
- 2 garlic cloves, minced
- 1 tablespoon vegetable oil
- 2 cups zucchini slices, unpeeled
- 1 cup red pepper slices
- ½ cup slivered almonds
- 2 tablespoon dry sherry
- 2 tablespoon soy sauce
- 1 teaspoon cornstarch
- 3 cups hot cooked rice
- 2 tablespoons toasted sesame seeds
Directions[]
- Marinate pork slices in egg white mixture 1 hour.
- Stir-fry pork, ginger and garlic in oil over medium-high heat.
- Remove from pan.
- Stir-fry zucchini, red pepper and almonds in oil a few minutes over medium-high heat.
- Add reserved pork, sherry, soy sauce and cornstarch to vegetables.
- Serve stir-fry over pork.
- Sprinkle with sesame seeds.
