Portuguese Chorizo Omelet

8 thin slices of chorizo 3 eggs 1/2 tsp salt 1/8 tsp freshly ground black pepper 2 Tbsp butter

Brown the chorizo in butter.

Beat eggs with a fork with salt and pepper. Beat until eggs can pass through fork without sticking to it.

Melt butter in hot frying pan then pour in eggs. Stir with a fork at the same time shaking pan until eggs start to set.

Add fried chorizo. When eggs are set fold over and cook until eggs are cooked through.
