Ingredients[]
- 2 pounds potatoes, boiled, peeled and sliced
- 1 carrot, grated
- 1 tbsp sugar
- 1 tbsp vinegar
- salt and pepper to taste
- 1 cup mayonnaise
- 4 tbsp lemon juice
- ¼ cup chopped chives or green onions
- 2 tbsp chopped parsley
- 2 tbsp prepared horseradish
Directions[]
- In a bowl, toss together first 5 ingredients until nicely mixed.
- Stir together the next 5 ingredients and add to the potatoes, tossing and turning until blended.
- Cover and refrigerate for several hours or overnight.
- Serve with cold ham, corned beef, and the like.
