  1. Bake potatoes at 350 °F for about one hour; peel, slice and place in a buttered 9 x 13 inch baking dish.
  2. Mix together pecans, brown sugar, oleo, salt and vanilla in a saucepan; bring to a boil and cook for about two to three minutes.
  3. Pour over potatoes and bake at 350 °F for 10 minutes.
