Pumpkin isn’t just for pie; it’s a type of squash, and it works in savory recipes, too.
Ingredients[]
- 2 large garlic cloves
- 1 (16-ounce) can reduced- sodium chickpeas (garbanzo beans), rinsed and drained
- 1 cup canned pumpkin
- ½ cup (2 ounces) freshly shredded Parmigiano- Reggiano cheese
- 3 tablespoons fresh lime juice
- 3 tablespoons plain fat-free Greek yogurt
- 1 teaspoon Southwest chipotle seasoning blend
- ¼ teaspoon salt
- 60 pita chips
Directions[]
- Drop garlic through food chute of a food processor with processor on.
- Process until minced.
- Add chickpeas; process until chopped.
- Add pumpkin and next 5 ingredients (through salt); process until smooth.
- Serve with pita chips.
Yield: Serves 20 (serving size: 2 tablespoons hummus and 3 pita chips)
