Pumpkin Dip

Ingredients

• 1 kg pumpkin
• salt
• 2 garlic cloves, crushed
• juice of 1 lemon or 2 Tbsp wine vinegar
• 2 Tbsp olive oil
• ½ teaspoon harissa, or 1 tsp paprika and a pinch of cayenne
• 1 tsp caraway seeds
• 1 tsp ground coriander

Directions

1. Boil pumpkin in salted water for about 10mins or until just tender.
2. Drain and puree with remaining ingredients.
