  1. Heat oil in skillet on medium heat.
  2. Add mushrooms and onion.
  3. Cook and stir 5 minutes or until tender.
  4. Stir in rice and water.
  5. Bring to a boil, cover.
  6. Reduce heat to low.
  7. Simmer 20 minutes or until rice is tender.
  8. Stir in ½ cup of the cheese and milk.
  9. Serve with remaining cheese.
