Quick Vitello Tonnato


Serves 4


2/3 C mayonnaise

� C drained tuna

2 anchovy fillets

2 t capers

Salt to taste

Freshly ground pepper

8-10 slices cooked veal


Spin the mayonnaise, tuna, anchovies, and all but 8 capers in the blender or food processor or beat well together until blended. Salt and pepper to taste. Spread over the veal and chill for several hours. Dot the remaining capers on top.
