8 pound sirloin tip roast Salt Pepper Garlic powder Worcestershire sauce

Allow roast to sit at room temperature for 45 minutes to 1 hour. (I usually let mine sit for 2 hours) Rub roast with spices. The amounts to your taste. Spray shallow roasting pan with no stick cooking spray and place meat in it. Brown meat in hot oven (450 to 500) for 15 minutes. Turn off oven and let cook then bake 15 minutes to the pound at 250. For 8 pounds, almost 2 hours. No water, no lid. Serves 10 to 12 Source: Laruenze Cooper Bouldin, claksdale
