Refrigerator Corn Relish

Source: old newspaper clipping

1 1/4 c distilled white vinegar

3/4 c sugar

2 1/2 tsp salt

1 1/4 tsp celery seeds

3/4 tsp mustard seeds

1/2 tsp liquid hot pepper seasoning

8 c cooked corn kernels

1 sm green bell pepper, seeded, chopped

1 (4-oz) jar diced pimentos, drained

3 scallions, chopped including tops

In 3-qt pan, combine vinegar, sugar, salt, celery seeds, mustard seeds hot pepper seasoning. Bring to simmer over med heat. Simmer, uncovered, 5 min; then

remove from heat & let cool. Stir in corn kernels, bell pepper, pimentos & scallions. Place in glass containers & refrigerate up to 1 mon.

about 4 pints
