Dandelion salad. Slovenians pick the dandelion every spring. The plants must be very young. Older leaves are bitter.
Ingredients[]
- 3 cups dandelion shoots or young leaves. pick them in early spring or late autumn
- 2 medium potatoes, cooked., peeled and sliced, or ½ cup cooked kidney beans
- 3 tablespoons apple vinegar
- 4 tablespoons bacon, finely diced
- 1 teaspoon salt
- ½ teaspoon caraway seeds
- 2 hard cooked eggs, sliced
