Makes 12 muffins.

  1. Beat eggs until frothy. Stir in rice, milk and cheese.
  2. Sift together flour, baking powder and salt.
  3. Sift again into rice mixture.
  4. Stir until blended.
  5. Grease and flour muffin pan.
  6. Fill ½ to ⅔ full of batter.
  7. Bake at 425 °F for 20 minutes.
  8. Serve immediately.
