- 4 cups cooked rice
- ½ cup finely chopped onion
- ½ cup chopped green bell pepper
- ¼ cup chopped pimentos
- 2 cups (8 ounces) shredded cheddar cheese, divided
- 1 x 10¾-ounce can condensed cream of mushroom soup
- 1 cup mayonnaise or salad dressing
- ¼ teaspoon ground black pepper
- ½ cup milk
Directions[]
- Combine rice, onion, green pepper and pimentos in large bowl.
- Blend 1 cup cheese, condensed soup, mayonnaise, black pepper and milk; stir into rice mixture.
- Turn into greased shallow 2-quart baking dish; sprinkle with remaining 1 cup cheese.
- Bake at 350°F for 25 minutes or until hot and bubbly.
