This soup is rich and very good.

  1. Chop mushrooms in food processor or finely chop by hand.
  2. Put butter in large skillet and cook onions over low heat for 5 minutes or until tender.
  3. Add chopped mushrooms and cook mixture for 2 minutes.
  4. Add flour and stir for 3 more minutes.
  5. Remove pan from heat and add chicken stock and half and half slowly while you whisk mixture.
  6. Return to moderate heat and simmer for 5 minutes.
  7. Continue stirring.
  8. Add salt and pepper to taste.
  9. Better if made ahead and reheated.
  10. Also can be frozen.
