Get your greens this season with these appetizing roasted veggies, dress up with lemon, mild chili and a sprinkle of sesame seeds.
Ingredients[]
- 1 tbsp. (15 ml) cooking oil
- 1 tbsp. (15 ml) lemon juice
- 1/2 tsp. (2 ml) chili paste (sambal oelek)
- 1/4 tsp. (1 ml) salt
- 1/2 tsp. (2 ml) pepper
- 1/4 tsp. (1 ml) ground coriander
- 4 cups (1 l) broccoli florets, halved
- 4 cups (1 l) Brussels sprouts (about 1 lb, 454 g), trimmed and halved lengthwise
- 1 cup (250 ml) pearl onions, larger ones halved
- 3 garlic cloves, thinly sliced
- 1 tbsp. (15 ml) sesame seeds, toasted
- 1/2 tsp. (2 ml) grated lemon zest
- 1/2 tsp. (2 ml) sesame oil
Directions[]
- Combine first 6 ingredients in large bowl.
- Add next 4 ingredients.
- Toss.
- Arrange in single layer on greased large baking sheet with sides.
- Cook in 400°F (205°C) oven for about 23 minutes, stirring at halftime, until Brussels sprouts and broccoli are browned and tender-crisp.
- Return to large bowl.
- Add remaining 3 ingredients.
- Toss.
Makes about 6 cups (1.5 l)
