  1. Preheat oven to 425°.
  2. Peel and cube butternut squash.
  3. Cut red onion into 8 wedges.
  4. Place squash and onion in a 13 x 9-inch baking dish coated with cooking spray.
  5. Drizzle with olive oil; sprinkle with sugar, salt, and ground red pepper.
  6. Toss to coat.
  7. Bake at 425° for 20 minutes or until tender, stirring occasionally.

Yield: 4 servings
