Ingredients[]
- 1 (2-pound) butternut squash
- 1 medium red onion
- Cooking spray
- 1 tablespoon olive oil
- 1/2 teaspoon sugar
- 1/2 teaspoon salt
- 1/4 teaspoon ground red pepper
Directions[]
- Preheat oven to 425°.
- Peel and cube butternut squash.
- Cut red onion into 8 wedges.
- Place squash and onion in a 13 x 9-inch baking dish coated with cooking spray.
- Drizzle with olive oil; sprinkle with sugar, salt, and ground red pepper.
- Toss to coat.
- Bake at 425° for 20 minutes or until tender, stirring occasionally.
Yield: 4 servings
