  1. Heat oven to 425°F.
  2. Line broiler pan with foil.
  3. Spray broiler pan rack with nonstick cooking spray.
  4. Wash hands.
  5. Place chicken and potatoes on rack.
  6. In small bowl, mix butter, rosemary, thyme, garlic, pepper and oregano.
  7. Rub or spoon mixture evenly on chicken and potatoes.
  8. Wash hands.
  9. Roast chicken and potatoes at 425°F for 35 to 40 minutes or until potatoes are tender and internal juices of chicken run clear.
  10. Serve with spinach salad and hot crusty rolls, if desired.
  11. Refrigerate leftovers immediately.
