- About 10 large potatoes, peeled and cut into thick wedges
- 1/2 cup extra virgin olive oil
- 1/3 cup lemon juice
- 6 cloves garlic, minced
- 1 1/2 cups water
- 2 tbsp dried parsley
- 2 tsp sea salt
- freshly ground black pepper, to taste
- Preheat oven to 400 F.
Place in the hot oven and bake for 1 1/2 hours, tossing frequently, until the potatoes are soft and lightly browned.
