Marinated olives always seem to go fast at holiday parties. This recipe roasts a gutsy mix of whole olives doused in garlic and rosemary.
Ingredients[]
- 3 cups assorted whole olives
- 1/4 cup olive oil
- 4 garlic cloves, thinly sliced
- 2 tablespoons chopped fresh rosemary
- 1 tablespoon grated lemon rind
- 1/2 teaspoon freshly ground black pepper
- 1/2 teaspoon fennel seeds, crushed
- 1/4 teaspoon dried crushed red pepper
Directions[]
- Combine all ingredients in a large bowl.
- Let stand at room temperature at least 15 minutes or up to several hours to allow flavors to blend.
- Place olives in a single layer on an aluminum foil-lined pan.
- Roast at 425° for 10 to 12 minutes, stirring occasionally.
- Serve warm or let cool to room temperature.
Yield: 3 cups
