  1. Salt the chicken, let sit for 15 – 20 minutes, then place in the roasting pan, add the lard and 2 – 3 tablespoons water and set in the oven.
  2. During roasting, baste with the pan drippings.
  3. Serve with French fries and green lettuce or cucumber salad.
