  1. Peel the potatoes, boil, drain and crush with the potato press, sieve or grind.
  2. Put in a bowl, add flour, salt, pepper and beaten egg, mixing well.
  3. Make pancakes from this mixture.
  4. Dredge with flour and fry in oil or lard.
  5. They may be served with sautes.
