Rootinest, Tootinest Rice Casserole in the West

2 cups instant rice, uncooked 2 1/2 cups bouillon 1 cup chopped celery 1 cup grated carrots 1/2 cup chopped green onions 1/2 cup chopped parsley 1/2 cup slivered blanched almonds

Preheat oven to 350. Combine rice and bouillon in a casserole dish. Bake, covered, for 30 minutes. Add vegetables and nuts to rice. Continue baking at the same temperature for 10 more minutes. This goes well with Yosemite Sam's Cranberry Chicken (see previous post) Makes 6 to 8 servings. Source: Estelle and Mel Blanc, voice actor
