  1. Crush 2 mint sprigs and rub them all over inside surface of tall glass.
  2. Discard mint.
  3. Freeze glass 1 – 2 hours.
  4. Finely chop leaves of 1 mint sprig.
  5. In food processor or blender, crush ice with peach, chopped mint, lime juice and sugar.
  6. Add rum and process 1 second.
  7. Garnish with remaining mint sprig.
