Cucumber/yogurt salad - This is a delightful, refreshing summer salad also popular in Egypt, Turkey and the Balkans.

Ingredients Edit

  • 2 Cups (16 oz / 500 g) plain yogurt
  • 1 clove garlic, finely minced
  • 1 large cucumber, peeled, seeded and shredded or finely diced
  • salt and freshly ground pepper

Directions Edit

  1. In a bowl, combine all the ingredients, cover and refrigerate for 2 – 4 hours
  2. At serving time, taste and adjust the seasoning, then serve immediately
