Sator's scientific names is parkia speciosa hassk and it is a crop from Thailand, where it mainly grows naturally. The local name of sator is petai and it is found in the rural areas and forests of the Southern Thailand. Sator is a plant which is grown for its seeds, as these are the edible parts of the plant. The plant can grow up to 30 m in height and its crown is usually in an umbrella shape. The flowers of sator produce a lot of sticky nectar and the fruits are dark brow or black, when they are ripe. The seeds are consumed like vegetables and integrated in many fresh or cooked dishes. The sator plant knows many varieties and the most common ones are rice sator, darn sator and tae sator, but not all of them are suitable for consumption. The sator`s pods are collected when they are about 50 cm long and 5 cm wide, while they are still green.
