Here's a basic recipe for soft-shell crabs. You can vary it by adding cayenne pepper, garlic powder, or other seasoning.

  1. Sprinkle crabs with salt and pepper.
  2. Place flour in a shallow bowl.
  3. Dredge each crab in flour, turning to coat; shake off excess flour.
  4. Melt butter in a nonstick skillet over medium-high heat.
  5. Add crabs to pan, top sides down; cook 3 minutes.
  6. Turn crabs over; cook 2 minutes.

Yield: 4 servings (serving size: 1 crab)
