  • Makes 6 servings of savory broccoli bread pudding.

  1. Coat a shallow baking dish with nonstick spray.
  2. Spread ½ the bread cubes over bottom.
  3. Cover with ½ the broccoli, ham, peppers, scallions and cheese.
  4. Repeat layers once.
  5. Whisk egg, milk, thyme, salt and pepper to blend.
  6. Pour over top.
  7. Cover with foil, refrigerate 2 hours.
  8. Heat oven to 350°F.
  9. Bake covered 60 minutes.
  10. Uncover bake 5 minutes or until done.
  11. Let stand 5 minutes before serving.
