For two persons:

  1. Wash, dry the eggplant, cube it, salt it and let it sit for 20 – 30 minutes.
  2. Then wash it and drain well.
  3. Fry in hot oil until soft.
  4. Pour the beaten eggs on top.
  5. Fry until the eggs are done (do not overfry).
  6. Serve immediately.
