  1. In a large, heavy saucepan, bring milk to the boiling over point.
  2. Add lemon juice and stir, until milk curdles.
  3. Remove from heat and let set for a few minutes.
  4. Pour curds into a cheesecloth.
  5. Tie cloth and press out excess moisture, until cheese is firm, like the curds in dry curd cottage cheese.
  6. Place cheese on a board, knead in sugar until the cheese is smooth.
  7. In a large heavy frying pan, heat ghee.
  8. Add sugared cheese and cook on low to medium heat for 7 minutes, stirring constantly.
  9. Otherwise it will stick or burn.
  10. Add crushed pistachios and ground cardamom.
  11. Remove from heat.
  12. Pour sandesh into a serving dish and smooth out by pressing down firmly with a spoon.
  13. Cut into equally sized portions.
  14. Serve either warm or chilled.
