Prepared mashed potatoes are located in the refrigerated section of larger grocers.

  1. Prepare mashed potatoes according to package directions; keep warm.
  2. Cook beef in a large nonstick skillet over medium-high heat until browned, stirring to crumble.
  3. Stir in picante sauce and next 5 ingredients; bring to a boil.
  4. Reduce heat; simmer until mixture thickens (about 5 minutes).
  5. Remove from heat.
  6. Spoon mashed potatoes over meat mixture, and sprinkle with cheese.
  7. Cover and let stand 2 minutes or until cheese melts.

Yield: 4 servings (serving size: 1 cup)
