Lots of saucy garlic butter will make you want to sop up every dribble of this dish with crusty bread. Quick tip: Call ahead to your grocer to order shrimp that's already peeled and deveined. If you decide to peel and devein it yourself, purchase 1 2/3 pounds shrimp in the shells.
Ingredients[]
- 1/4 cup butter
- 4 garlic cloves, chopped
- 1 1/4 pounds peeled and deveined, large fresh shrimp
- 2 tablespoons fresh lemon juice (about 1 lemon)
- 2 tablespoons chopped fresh chives
- 1/2 teaspoon salt
- 1/4 teaspoon pepper
- Garnish: fresh chives
Directions[]
- Melt butter in a large skillet over medium-high heat; add garlic, and cook 1 minute or until browned.
- Add shrimp, and cook, stirring often, 4 minutes or until shrimp turn pink.
- Stir in lemon juice and next 3 ingredients.
- Serve over rice or with crusty bread.
- Garnish, if desired.
Yield: 2 to 3 servings
