This recipe came from an estate sale. I obtained it when I purchased the family collection from the Cunningham Estate in Seven Points, Texas in 1999.

  1. Sauté chopped pepper and onion in olive oil then add potatoes to brown slightly then add tomato and garlic and cook until mixture is warm.
  2. Top with cheese and serve with eggs of your choice.
