Skillet Chicken and Noodles
1 lb. boneless skinless chicken breasts cubed
1/4 C. chopped onion 1 pkg. frozen vegetables(mixed) 1 (10 oz) can cream of chicken soup 2 T. water 1/2 C. sour cream 2-3 C. hot cooked noodles
Spray large skillet with cooking spray. Cook chicken and onion over medium high heat until chicken is browned, stirring occasionally.
Add vegetables, soup and water; mix well. Reduce heat to low; cover and simmer 8-10 minutes or until vegetables are crisp-tender, stirring occasionally. Remove from heat, stir in sour cream and noodles. Salt and pepper to taste.
